Every time my dad came home from a work trip, he’d take me there. It wasn’t fancy, just a tiny spot tucked away in the Old Quarter, but to us, it was perfect. Dad would always pile his plate high with fresh herbs, balancing flavors like a pro. I, on the other hand, had a different ritual—one extra nem rán (fried spring roll) and a glass of iced tea, every single time. Now, every time I serve Bún Chả at Madam Yen, I think of those days. I think of the charcoal-grilled pork, smoky and rich, just like the ones in Hanoi.
